Barbeque Peach Bacon Chicken Salad

It is Hot and Humid in Wisconsin today, so this salad is the perfect summer lunch or dinner. I was lucky to get a great deal on peaches at the farmers market $1 per pound. Of course, I bought way to many and they were losing quality fast. Took chicken out to thaw earlier in the day. I really wanted a little blue cheese in the salad, but we were out. To make up for not having the fat from the cheese, I fried up some crispy bacon. For the dressing I wanted a creamy, tangy bbq to wake up this salad. Finally I added some other fresh veggies to complete this refreshing summer salad.

Barbeque Peach Bacon Chicken Salad

Ingredients
  • 8 cups of your favorite salad greens
  • ¼ cup diced onions
  • 2 peaches diced
  • ½ cup diced carrots
  • 1 cup diced tomato
  • 1 small jalapeno finely chopped
  • 5 fried crumbled strips of bacon
  • 4 small boneless skinless chicken breast grilled and diced
  • For the dressing
  • ¼ cup bbq sauce
  • ¼ cup cream
  • 2 tablespoon milk
  • 1 tablespoon apple cider vinegar
  • pinch of salt
  • 2 teaspoons cajun seasoning
Instructions
  1. Grill the chicken and cook the bacon. While these are cooking chop the veggies and peaches.
  2. Combine dressing ingredients and stir to desired consistency.
  3. Place greens on salad bowl or plate. Add veggies and peaches. Place crumbled bacon and diced chicken on top. spoon desired amount of dressing over salad.
